A rich and comforting corn casserole baked with creamy ingredients and topped with melted cheddar cheese.
Ingredients
2 (15-ounce) cans sweet whole kernel corn, drained
2 (15-ounce) cans cream-style corn
2 (8-ounce) boxes corn muffin mix
2 cups sour cream
1 cup unsalted butter, melted
1½ cups shredded cheddar cheese, divided
Instructions
1. Preheat oven to 350°F and grease a 9×13-inch baking dish.
2. Combine corn, cream-style corn, muffin mix, sour cream, butter, and 1 cup cheese.
3. Mix until well blended.
4. Spread into baking dish evenly.
5. Bake for 45 to 55 minutes until golden.
6. Increase oven to 400°F and add remaining cheese.
7. Bake 5 to 10 minutes until melted and bubbly.
8. Rest for 5 minutes before serving.
Notes
Store leftovers in refrigerator up to 4 days.
Reheat before serving for best texture.
