Description

A creamy, comforting one-pan chicken pasta skillet packed with flavor and melted cheese.


Ingredients

1 pound boneless, skinless chicken breasts, cut into bite-size pieces

2 cups shredded Italian-style cheese blend

1/2 red bell pepper, diced

1/4 onion, chopped

2 tablespoons plain Greek yogurt

1 teaspoon Italian seasoning

1 teaspoon garlic powder

24 ounces marinara sauce

1 cup chicken broth

1/2 teaspoon minced garlic

3 cups farfalle or other short pasta

Salt and black pepper, to taste

1 tablespoon olive oil


Instructions

1. Season the chicken pieces with salt, black pepper, and garlic powder.

2. Heat the olive oil in a large skillet over medium heat. Add the bell pepper, onion, and minced garlic. Cook until softened.

3. Add the chicken and cook until no longer pink.

4. Stir in marinara sauce, chicken broth, and Italian seasoning.

5. Add pasta and press into the liquid. Simmer about 15 minutes until tender.

6. Stir in Greek yogurt and 1/2 cup cheese until creamy.

7. Top with remaining cheese, cover, and let melt.

8. Serve warm.

Notes

Stir occasionally to prevent sticking.

Add broth if needed to maintain moisture.

Best served fresh but reheats well.
