Description
Cheesy chicken enchiladas baked with rich sauce and melted cheese for a quick and satisfying meal.
Ingredients
1 1/2 cups cooked shredded boneless chicken
2 cups red enchilada sauce, divided
8 corn or flour tortillas
2 1/2 cups shredded Mexican-style cheese, divided
Salt, to taste
Black pepper, to taste
Optional toppings: diced onion, chopped cilantro, sour cream, shredded lettuce, or crumbled cotija-style cheese
Instructions
1. Preheat the oven to 350°F.
2. In a large bowl, stir together the shredded chicken, 1/4 cup enchilada sauce, salt, and black pepper. Taste and adjust the seasoning as needed.
3. Warm the tortillas until soft and flexible.
4. Spoon the chicken mixture evenly into the tortillas and add 1 cup of the shredded cheese.
5. Roll each tortilla tightly and place seam-side down in a large baking dish.
6. Pour the remaining enchilada sauce over the rolled tortillas.
7. Sprinkle the remaining cheese on top.
8. Bake for 20 minutes, or until the cheese is melted and bubbly.
9. Serve warm with your favorite toppings.
Notes
Warm tortillas to prevent cracking.
Use rotisserie chicken for convenience.
Adjust seasoning to taste.
