Description

A creamy, cheesy cauliflower casserole with roasted florets, savory turkey bacon, and a rich garlic-infused sauce baked until bubbly.


Ingredients

1 large head cauliflower, cut into small florets

2 tablespoons unsalted butter, melted

1/2 teaspoon sea salt

1/4 teaspoon black pepper

2/3 cup sour cream

1/4 cup heavy cream

2 garlic cloves, minced

1 1/2 cups shredded cheddar cheese, divided

6 tablespoons cooked turkey bacon, chopped, divided

1/4 cup sliced green onions, divided


Instructions

1. Preheat the oven to 450°F.

2. Place the cauliflower florets in a large bowl. Drizzle with melted butter, then season with salt and black pepper. Toss until evenly coated.

3. Spread the cauliflower in a small casserole dish. Roast for 25 to 30 minutes, stirring halfway through, until tender with lightly browned edges.

4. In the same bowl, whisk together sour cream, heavy cream, and minced garlic. Stir in 3/4 cup cheddar cheese, 3 tablespoons turkey bacon, and 2 tablespoons green onions.

5. Add roasted cauliflower to the creamy mixture and stir gently until coated.

6. Transfer back to casserole dish. Sprinkle with remaining cheddar cheese and turkey bacon.

7. Bake for 5 to 10 minutes until cheese is melted and bubbly. Top with remaining green onions before serving.

Notes

Do not overcrowd cauliflower while roasting for best texture.

You can substitute Greek yogurt for sour cream.

Best served warm for optimal creaminess.
