Description

A hearty one-pan dinner made with crispy potatoes, savory ground beef, rich broth, and melted cheddar cheese.


Ingredients

1 tablespoon olive oil

1 tablespoon butter

1½ pounds baby yellow potatoes, halved

1 pound lean ground beef

1 cup diced yellow onion

4 garlic cloves, minced

½ teaspoon salt

½ teaspoon paprika

½ teaspoon dried oregano

½ teaspoon ground black pepper

2 tablespoons tomato paste

2 cups beef broth

1½ cups shredded cheddar cheese


Instructions

1. Heat a large pot or deep skillet over medium-high heat. Add the olive oil and butter.

2. Add the halved potatoes and cook for about 5 minutes, stirring occasionally, until the edges begin to turn golden and crisp. Transfer the potatoes to a plate and set aside.

3. Add the ground beef to the same pot. Break it apart with a spatula and cook until browned and fully cooked, about 4 minutes.

4. Stir in the diced onion and minced garlic. Cook for 1 minute until fragrant.

5. Add the tomato paste, salt, paprika, oregano, and black pepper. Stir well to coat the beef evenly with the seasonings.

6. Return the potatoes to the pot and pour in the beef broth. Stir everything together and cover with a lid.

7. Reduce heat slightly and simmer for about 10 minutes, stirring occasionally, until the potatoes are tender and most of the broth has cooked down.

8. Remove from heat and stir in the shredded cheddar cheese until melted and creamy. Serve warm.

Notes

Use sharp cheddar for deeper flavor.

Baby yellow potatoes hold their texture best during simmering.

Add extra broth while reheating leftovers if needed.
