Description

A rich and creamy potato soup loaded with cheddar cheese, sour cream, and comforting flavors perfect for cozy meals.


Ingredients

4 large russet potatoes, peeled and cut into 1-inch cubes

3/4 teaspoon salt

2 tablespoons butter

1 large yellow onion, diced

3 cloves garlic, minced

1/4 cup all-purpose flour

3 1/2 cups chicken broth

2 cups half-and-half

3/4 cup sour cream

1/2 teaspoon black pepper

2 cups shredded cheddar cheese

2 tablespoons chopped fresh chives

1/2 cup cooked smoked turkey, finely chopped or crumbled (optional)


Instructions

1. Shred the cheese and measure out the sour cream and half-and-half. Let them sit at room temperature.

2. Place potatoes in a pot, cover with water, add salt, and boil for 20 minutes until tender. Drain and mash.

3. Melt butter in a pot, cook onion for 5 minutes until soft.

4. Add garlic and cook for 1 minute.

5. Whisk in flour and cook for 1 minute.

6. Slowly add chicken broth while whisking.

7. Add half-and-half and bring to a gentle boil, then simmer.

8. Stir in mashed potatoes, sour cream, and pepper.

9. Remove from heat and blend if desired.

10. Add cheese gradually, stirring until melted.

11. Serve topped with chives and smoked turkey.
