Creamy ranch chicken pasta made in one pot with cheddar cheese, cream cheese, and tender shredded chicken for an easy comforting dinner.
Ingredients
2 cups cooked shredded chicken
1 ounce dry ranch seasoning
8 ounces uncooked penne pasta
3 1/2 cups chicken broth
4 ounces cream cheese, softened
2 cups shredded cheddar cheese
1 tablespoon chopped fresh parsley
Instructions
1. In a bowl, toss the shredded chicken with the ranch seasoning until evenly coated.
2. Add the chicken broth, penne, and seasoned chicken to a large pot over medium heat. Stir well and bring to a boil.
3. Reduce the heat to low, cover, and cook for 15 to 20 minutes, stirring occasionally, until the pasta is tender. A little liquid should remain in the pot.
4. Stir in the softened cream cheese until smooth and mostly melted.
5. Add the shredded cheddar cheese and stir until the sauce is creamy and fully melted.
6. Sprinkle with fresh parsley and serve warm.
Notes
Freshly shredded cheddar melts more smoothly into the sauce.
Add vegetables like broccoli or spinach for extra texture and flavor.
Store leftovers in the refrigerator and reheat with a splash of broth.
