Ingredients

¼ cup cornstarch
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
½ teaspoon sea salt
¾ cup water
1 large cauliflower, cut into large florets
½ to ¾ cup buffalo sauce
Ranch, vegan ranch, or blue cheese dressing, optional for dipping
Instructions
1. Preheat the oven to 450°F. Line two large baking sheets with parchment paper.
2. In a large bowl, whisk together the flour, cornstarch, garlic powder, onion powder, paprika, and salt. Pour in the water and whisk until the batter is smooth.
3. Add the cauliflower florets to the bowl and gently toss until evenly coated.
4. Lift the cauliflower from the batter, letting the extra drip off. Arrange the pieces in a single layer on the prepared baking sheets.
5. Bake for 10 minutes, then carefully flip the cauliflower.
6. Bake for another 10 minutes, rotating the pans between oven racks.
7. Brush the cauliflower with buffalo sauce and bake for 12 to 15 more minutes, until crisp and browned around the edges.
8. Brush with more buffalo sauce before serving.
9. Serve warm with dressing for dipping, if desired.

For the crispiest texture, avoid overcrowding the baking sheets.
Adjust the amount of buffalo sauce based on your preferred spice level.
