Description

Easy baked pepperoni pasta casserole made with marinara sauce, mozzarella cheese, and a simple no-boil pasta method for a comforting family dinner.


Ingredients

16 ounces small pasta

25 ounces marinara sauce

2 cups vegetable broth

1 1/2 cups shredded mozzarella cheese

1/2 cup turkey or beef pepperoni slices

Grated Parmesan cheese, optional


Instructions

1. Preheat the oven to 400°F. Lightly grease a 9×13-inch baking dish.

2. Add the uncooked pasta to the baking dish and spread it out evenly.

3. Pour in the marinara sauce and vegetable broth, then stir until the pasta is well coated.

4. Sprinkle the mozzarella cheese over the top, then arrange the turkey or beef pepperoni slices evenly over the cheese.

5. Cover the dish tightly with foil and bake for 35 to 40 minutes, or until the pasta is tender.

6. Remove the foil and broil for 1 to 2 minutes, just until the cheese is bubbly and lightly golden.

7. Serve warm with grated Parmesan cheese, if desired.
