Description
A comforting baked nacho casserole layered with seasoned beef, black beans, crunchy tortilla chips, and melted cheese.
Ingredients
1 pound ground beef
1 medium yellow onion, chopped
1 tablespoon minced garlic
2 teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon smoked paprika
1 teaspoon salt
1/2 teaspoon dried oregano
1/2 teaspoon black pepper
1 1/2 cups chunky red salsa
1 can (15 ounces) tomato sauce
1 can (15 ounces) black beans, drained and rinsed
1 bag (12 ounces) gluten-free tortilla chips
4 cups shredded Mexican-style cheese blend
Sour cream, for serving, optional
Instructions
1. Preheat the oven to 400°F.
2. In a large skillet over medium heat, cook the ground beef, breaking it into small pieces, until mostly browned. Add the onion and garlic, then cook for 3 to 4 minutes, until the onion softens.
3. Stir in the chili powder, cumin, smoked paprika, salt, oregano, and black pepper. Cook for 1 minute to bring out the flavor.
4. Add the salsa, tomato sauce, and black beans. Stir until everything is well combined, then remove the skillet from the heat.
5. Spread a layer of tortilla chips in a 9×13-inch baking dish. Spoon half of the beef mixture over the chips, then sprinkle with half of the cheese. Repeat with the remaining chips, beef mixture, and cheese.
6. Bake for 15 to 20 minutes, until the cheese is melted and the casserole is hot and bubbly.
7. Serve warm with sour cream, if desired.
Notes
Use sturdy tortilla chips for the best texture.
Add jalapeños for extra heat if desired.
Store leftovers covered in the refrigerator for up to 3 days.
