Comforting baked chicken layered with caramelized onions, savory broth, and melted cheese for an easy family dinner.
Ingredients
3 tablespoons butter
2 teaspoons olive oil
4 to 5 large yellow or white onions, thinly sliced
1/4 teaspoon black pepper
2 sprigs fresh thyme or 1/2 teaspoon dried thyme
3 cloves garlic, minced
1 tablespoon balsamic vinegar
2/3 cup reduced-sodium beef broth, divided
4 boneless, skinless chicken breasts
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1/2 teaspoon dried thyme
1 teaspoon garlic powder
1 cup shredded mozzarella or Gruyere cheese
1/3 cup shredded Parmesan cheese
Instructions
1. Preheat the oven to 400°F. Lightly grease a 9×13-inch baking dish.
2. In a large skillet over medium to medium-high heat, warm the butter and olive oil. Add the sliced onions, 1/4 teaspoon black pepper, and thyme. Cook for 8 minutes, stirring only occasionally.
3. Reduce the heat to medium-low and continue cooking the onions for about 15 minutes, stirring now and then, until soft and deeply golden.
4. Stir in the garlic and cook for 1 minute. Add the balsamic vinegar and 1/3 cup of the beef broth. Cook briefly until the onions become thick and jammy.
5. Spoon about 1/2 cup of the onions into the prepared baking dish. Add the remaining 1/3 cup beef broth and stir gently.
6. Season the chicken on both sides with kosher salt, black pepper, dried thyme, and garlic powder.
7. Arrange the chicken in the baking dish. Spoon the remaining caramelized onions over the top.
8. Sprinkle with mozzarella or Gruyere, then add Parmesan.
9. Bake for about 25 minutes, or until the chicken reaches 165°F in the center and the cheese is melted and bubbly.
10. Let rest for a few minutes before serving.
Notes
Gruyere gives the dish classic French onion flavor, while mozzarella creates a softer, creamier texture.
For extra flavor, prepare the caramelized onions ahead of time.
Store leftovers in an airtight container for up to 3 days.
