A rich and comforting vegetable casserole with a creamy cheese sauce and crispy topping.
Ingredients
1 pound broccoli florets
1 pound cauliflower florets
1/2 pound baby carrots
3 tablespoons butter
3 cloves garlic, minced
2 tablespoons cornstarch
2 cups heavy cream
1 1/2 teaspoons dried Italian seasoning
Salt and freshly ground black pepper, to taste
1/4 to 1/2 teaspoon chili powder
1/8 teaspoon ground nutmeg
3/4 cup shredded Italian-style cheese blend
1 cup panko breadcrumbs or crushed crackers
Instructions
1. Preheat oven to 400°F and grease a baking dish
2. Boil vegetables until fork-tender then drain
3. Melt butter and cook garlic briefly
4. Stir in cornstarch and cook for 1 minute
5. Whisk in cream and cook until thickened
6. Add seasoning and cheese, mix until smooth
7. Layer sauce and vegetables in dish
8. Top with breadcrumbs
9. Bake 20 to 23 minutes until bubbly
10. Rest 10 minutes before serving
Notes
Do not overcook vegetables before baking
Adjust seasoning after baking for best flavor
Add extra cheese for a richer texture if desired
