Description

A rich and elegant baked creamy salmon recipe with garlic butter, parmesan, spinach, and fresh herbs.


Ingredients

4 salmon fillets (skin on or off)

Salt and black pepper, to taste

4 tablespoons butter

2 tablespoons fresh thyme leaves

4 garlic cloves, lightly crushed

1 shallot, thinly sliced

Pinch of red pepper flakes

1 cup heavy cream

1/3 cup green herb sauce (salsa-style, no alcohol)

1 cup grated Parmesan cheese

1/2 cup chopped sun-dried tomatoes

3 cups fresh baby spinach

1 tablespoon lemon juice

1 tablespoon lemon zest

2 tablespoons chopped fresh dill

1/4 cup chopped green onions


Instructions

1. Set your oven to broil and allow it to heat up.

2. Place the salmon fillets in an oven-safe skillet. Season with salt and pepper. Add 1 tablespoon of butter, thyme, and garlic to the pan. Broil for about 5–8 minutes, until the tops are lightly crisp.

3. Remove the salmon from the skillet and set aside.

4. Put the same skillet over medium heat. Add the remaining butter, sliced shallot, and red pepper flakes. Cook for about 2 minutes until fragrant. Mash the garlic into a paste using a fork.

5. Pour in the heavy cream and green herb sauce. Stir continuously and bring to a gentle simmer until smooth.

6. Add the Parmesan cheese, sun-dried tomatoes, and spinach. Cook for 3–5 minutes until the spinach wilts and the sauce thickens slightly.

7. Return the salmon to the skillet, nestling it into the sauce. Drizzle with lemon juice.

8. In a small bowl, mix the lemon zest, dill, and green onions. Sprinkle this mixture over the salmon before serving.

Notes

Use fresh salmon for best texture.

Do not overcook to keep the fish tender.

Adjust red pepper flakes for spice level.
