Description
A rich and comforting baked chicken dish made with garlic cream sauce, spinach, and sun-dried tomatoes.
Ingredients
4 boneless, skinless chicken breasts
Salt and black pepper, to taste
1 tablespoon olive oil
3 garlic cloves, minced
1 cup heavy cream
1/2 cup low-sodium chicken broth
1/2 cup sun-dried tomatoes, chopped
2 teaspoons Italian seasoning
1 teaspoon paprika
1/2 teaspoon red pepper flakes
1 cup fresh spinach, chopped
Fresh parsley, chopped for garnish
Instructions
1. Preheat your oven to 400°F.
2. In a baking dish, mix together the olive oil, garlic, heavy cream, chicken broth, sun-dried tomatoes, Italian seasoning, paprika, and red pepper flakes until well combined.
3. Season the chicken breasts with salt and black pepper, then place them into the sauce in the baking dish.
4. Bake uncovered for 20–25 minutes, until the chicken is lightly golden and nearly cooked through.
5. Remove the dish from the oven and scatter the chopped spinach around the chicken.
6. Return to the oven and bake for another 5–10 minutes, until the spinach is wilted, the sauce is bubbling, and the chicken reaches an internal temperature of 165°F.
7. For a golden finish, broil for 2–3 minutes at the end if desired, watching carefully.
8. Let the dish rest for a few minutes before serving. Garnish with fresh parsley and serve warm.
Notes
Use evenly sized chicken breasts for consistent cooking.
Add parmesan cheese for extra richness if desired.
Serve with rice, pasta, or crusty bread for a complete meal.
