Description

A comforting baked chicken and rice casserole made with creamy soup, tender chicken, and melted cheddar cheese. Perfect for an easy family dinner.


Ingredients

1 1/2 cups long-grain white rice

2 cans condensed cream of chicken soup or cream of mushroom soup

1 cup water

2 cups milk

1 packet onion soup mix

1 1/2 cups shredded cheddar cheese, divided

3 large boneless skinless chicken breasts or 6 thighs

1/2 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Preheat oven to 350°F and grease a 9×13-inch baking dish

2. Mix rice, soup, water, milk, and onion soup mix in a bowl

3. Pour mixture into baking dish

4. Sprinkle half of the cheese over mixture

5. Place chicken on top and season with salt and pepper

6. Cover with foil and bake for 1 hour 30 minutes to 2 hours

7. Remove from oven and add remaining cheese

8. Let rest 15 to 20 minutes before serving

Notes

Ensure dish is tightly covered to cook rice properly
