Description

Crispy phyllo cups filled with creamy avocado, fresh tomatoes, Greek yogurt, and seasoned shrimp for an easy and elegant appetizer.


Ingredients

1 pound medium shrimp, tails left on

2 tablespoons corn oil

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

1/4 teaspoon cayenne pepper

1/4 teaspoon dried minced onion

1 tablespoon red onion, finely diced

8 cherry tomatoes, thinly sliced

2 tablespoons plain Greek yogurt

1 ripe avocado, peeled and pitted

15 phyllo dough cups

Optional: 1 tablespoon chopped cilantro

Optional: 1 teaspoon lime juice


Instructions

1. Preheat the oven to 350°F.

2. In a bowl, toss the shrimp with the corn oil, garlic powder, onion powder, cayenne pepper, and dried minced onion until evenly coated.

3. Arrange the shrimp on a baking sheet and bake for 5 minutes, or until fully cooked and opaque.

4. While the shrimp cooks, place the avocado and diced red onion in a medium bowl. Mash together until smooth. If desired, stir in the cilantro and lime juice for extra flavor.

5. Spoon the guacamole mixture evenly into the phyllo dough cups.

6. Place a slice of cherry tomato on top of the guacamole in each cup.

7. Transfer the Greek yogurt to a piping bag or small plastic bag with the corner snipped off, then add a small dollop to each cup.

8. Top each cup with one cooked shrimp.

9. Serve immediately for the best texture and flavor.

Notes

Use ripe avocado for the smoothest filling.

Assemble just before serving to keep the phyllo cups crisp.

Fresh lime juice and cilantro add extra brightness.
