A fresh vegan appetizer featuring creamy avocado, crisp cucumber slices, spicy roasted chickpeas, fresh herbs, and a drizzle of chipotle sauce.
Ingredients
1 ripe avocado, mashed
1 teaspoon lemon or lime juice
Salt, to taste
Black pepper, to taste
2 cucumbers, sliced into thick rounds
1 cup spicy roasted chickpeas
2 tablespoons chipotle sauce or dairy-free spicy cream sauce
3 tablespoons chopped fresh parsley or mixed fresh herbs
Instructions
1. In a small bowl, mash the avocado until smooth.
2. Stir in the lemon or lime juice and season with salt and black pepper to taste.
3. Arrange the cucumber slices on a serving platter.
4. Spread a spoonful of the avocado mixture onto each cucumber slice.
5. Press several spicy roasted chickpeas onto the avocado layer.
6. Drizzle lightly with the chipotle sauce if desired.
7. Sprinkle chopped fresh herbs over the top before serving.
8. Serve immediately while the cucumbers and avocado are chilled for the freshest flavor and texture.
Notes
For the best texture, assemble just before serving. Fresh herbs such as parsley, cilantro, or dill all work well in this recipe.
