1 lb ground mild Italian turkey or chicken sausage

1 onion, finely diced

3 cloves garlic, minced

2 medium russet potatoes, peeled and cubed (about 3–4 cups)

6 cups chicken broth

2–3 cups chopped kale, stems removed

3/4 cup heavy cream

Salt and pepper, to taste

Cook the Sausage: Warm the olive oil in a large pot over medium-high heat. Add the sausage and cook until browned and fully done, breaking it into small pieces as it cooks.

Add Aromatics: Stir in the onion and garlic. Cook for 5–7 minutes, or until the onions are soft and fragrant.

Simmer the Potatoes: Add the potatoes and chicken broth. Bring to a gentle simmer and cook for 7–10 minutes, just until the potatoes become tender.

Finish the Soup: Stir in the kale and heavy cream. Let the soup simmer for another 5 minutes, allowing the kale to soften and the flavors to blend.
