Description

Zuppa Toscana delivers creamy comfort with sausage, potatoes, kale, and broth for an easy, satisfying homemade soup.


Ingredients

  • 1 tablespoon olive oil

  • 1 lb ground mild Italian turkey or chicken sausage

  • 1 onion, finely diced

  • 3 cloves garlic, minced

  • 2 medium russet potatoes, peeled and cubed (about 34 cups)

  • 6 cups chicken broth

  • 23 cups chopped kale, stems removed

  • 3/4 cup heavy cream

  • Salt and pepper, to taste

  • Grated Parmesan, for serving

  • Crusty bread, for serving


Instructions

  • Cook the Sausage: Warm the olive oil in a large pot over medium-high heat. Add the sausage and cook until browned and fully done, breaking it into small pieces as it cooks.

  • Add Aromatics: Stir in the onion and garlic. Cook for 5–7 minutes, or until the onions are soft and fragrant.

  • Simmer the Potatoes: Add the potatoes and chicken broth. Bring to a gentle simmer and cook for 7–10 minutes, just until the potatoes become tender.

  • Finish the Soup: Stir in the kale and heavy cream. Let the soup simmer for another 5 minutes, allowing the kale to soften and the flavors to blend.

 

  • Season and Serve: Taste and season with salt and pepper as needed. Ladle into bowls, top with Parmesan, and serve with warm crusty bread.
