Description

Creamy garlic chicken dip loaded with grilled chicken, cheddar cheese, sour cream, and roasted garlic. Perfect for parties and quick appetizers.


Ingredients

1 boneless, skinless chicken breast

½ teaspoon salt, divided

½ teaspoon black pepper, divided

1 cup sour cream

¾ cup mayonnaise

1 teaspoon roasted garlic paste

½ teaspoon chicken bouillon powder

1 Roma tomato, seeded and diced

¼ cup green onions, thinly sliced (plus extra for garnish)

1 ½ cups shredded cheddar cheese (plus extra for garnish)


Instructions

1. Preheat a grill or grill pan over medium-high heat. Season the chicken breast with ¼ teaspoon salt and ¼ teaspoon black pepper.

2. Grill the chicken for 3–4 minutes per side, or until the internal temperature reaches 165°F. Remove from heat and let rest for a few minutes, then shred or finely dice. Set aside.

3. In a medium mixing bowl, combine the sour cream, mayonnaise, roasted garlic paste, chicken bouillon powder, and the remaining ¼ teaspoon salt and ¼ teaspoon black pepper. Stir until smooth and well blended. Taste and adjust seasoning if needed.

4. Fold in the diced tomato, sliced green onions, shredded chicken, and shredded cheddar cheese. Stir until evenly combined.

5. Transfer the dip to a serving bowl. Garnish with additional shredded cheese and green onions on top.

6. Serve immediately, or cover and refrigerate for up to 2 hours before serving.

Notes

For deeper flavor, grill the chicken with a light char before shredding. The dip can be made ahead and chilled for up to two hours before serving.
