Description

Hearty Italian-inspired soup made with cannellini beans, turkey sausage, herbs, and kale. Ideal for make-ahead meals.


Ingredients

2 tablespoons olive oil

1 pound sweet Italian–style turkey sausage, casings removed

1 medium yellow onion, finely chopped

3 cloves garlic, minced

2 large carrots, chopped

2 large ribs celery, chopped

1 large potato, diced (optional)

2 medium tomatoes, chopped

1 tablespoon tomato paste

1 pound dried cannellini beans, soaked overnight, drained, and rinsed

8 cups vegetable broth

1/2 teaspoon dried rosemary

1/2 teaspoon dried thyme

1/2 teaspoon dried oregano

1/4 teaspoon ground sage

2 bay leaves

1 1/2 teaspoons salt

1/2 teaspoon ground black pepper

2 bunches lacinato kale, ribs removed and leaves chopped


Instructions

1. Warm olive oil in a large pot over medium heat and brown the turkey sausage.

2. Add onion and garlic and cook until softened.

3. Stir in carrots, celery, and potato and cook briefly.

4. Mix in tomatoes and tomato paste and cook to develop flavor.

5. Add beans, broth, herbs, bay leaves, salt, and pepper and bring to a boil.

6. Reduce heat, cover, and simmer until beans are tender.

7. Add kale and simmer until wilted.

8. Adjust seasoning and serve.

Notes

Flavor deepens after resting overnight. Store refrigerated up to four days or freeze for longer storage.
