Description

 Tortellini soup made creamy and flavorful with sausage, vegetables, and tender pasta. A quick, satisfying meal for any night.


Ingredients

1 lb ground mild turkey Italian–style sausage
1 small yellow onion, diced
2 celery stalks, diced
2 large carrots, peeled and diced
3 garlic cloves, minced
1 teaspoon kosher salt
1/2 teaspoon ground black pepper
1/2 teaspoon Italian seasoning
1 teaspoon fennel seed, lightly crushed
1 can (6 oz) tomato paste
1/2 cup all-purpose flour
6–7 cups chicken broth
14 oz refrigerated cheese tortellini
2 cups half-and-half or heavy cream
1 handful chopped fresh spinach
Fresh parsley for serving
Grated Parmesan for serving


Instructions

  • Warm a large stockpot over medium-high heat. Add the turkey sausage and cook, breaking it into small pieces, until mostly browned.

  • Stir in the onion, celery, and carrots. Sauté for about 5 minutes, or until the vegetables begin to soften.

  • Add the garlic, salt, pepper, Italian seasoning, fennel seed, and tomato paste. Cook for 3–5 minutes, stirring often, until the mixture becomes fragrant.

  • Sprinkle in the flour and stir for 1 minute. The mixture will thicken and cling to the sausage and vegetables.

  • Gradually pour in the chicken broth while stirring to remove any lumps. Bring the soup to a gentle simmer, then reduce the heat to low and cook for about 15 minutes.

  • Add the cream and return the soup to a low simmer. Stir in the tortellini and spinach. Cook until the tortellini are al dente according to the package instructions.

 

  • Ladle into bowls and top with fresh parsley and Parmesan.
