Description
A hearty Italian-American soup made with seasoned ground beef, tender vegetables, and cheese tortellini in a rich beef broth.
Ingredients
2 tbsp olive oil
1 lb ground beef
1 yellow onion, diced
1 zucchini, diced
2 celery stalks, sliced
2 garlic cloves, minced
1 can (14 oz) diced tomatoes
6 cups beef broth
2 tbsp tomato paste
1 tbsp paprika
1 tbsp Italian seasoning
2 tsp dried oregano
8 oz cheese tortellini
1 cup spinach
Salt and black pepper
Parsley or Parmesan
Instructions
1. Warm olive oil in a large pot and cook celery and onion until softened.
2. Add zucchini and seasoning, cook briefly, then remove vegetables.
3. Brown ground beef in the same pot, add garlic.
4. Return vegetables, add tomatoes, broth, tomato paste, and spices. Simmer.
5. Add tortellini and spinach and cook until tender.
6. Serve warm with parsley or Parmesan.
Notes
Use fresh or frozen tortellini. Adjust seasoning to taste and add cream for a richer version.
