Description

Sweet and savory baked meatballs with pineapple and a rich teriyaki glaze, perfect for appetizers or quick meals.


Ingredients

2 cans (8 ounces each) pineapple chunks, drained, with 1/4 cup juice reserved

1 medium onion, finely chopped

1/4 cup finely chopped yellow bell pepper

1/4 cup finely chopped red bell pepper

1/2 cup dry bread crumbs

1/2 teaspoon ground ginger

1/4 teaspoon salt

1 pound lean ground beef

1/4 cup canola oil

1/4 cup soy sauce

3 tablespoons honey

2 tablespoons vinegar

3/4 teaspoon garlic powder

1/2 teaspoon ground ginger

Sliced green onions (optional)


Instructions

1. Preheat the oven to 400°F. Lightly grease a 13 x 9-inch baking dish.

2. Drain the pineapple chunks and save 1/4 cup of the juice. Set the pineapple aside.

3. In a large bowl, combine onion, bell peppers, bread crumbs, ginger, salt, and reserved pineapple juice.

4. Add ground beef and mix gently until combined.

5. Shape into 1-inch meatballs and place in baking dish.

6. Blend oil, soy sauce, honey, vinegar, garlic powder, and ginger until smooth.

7. Spoon a small amount of sauce into the dish, add meatballs, and pour remaining sauce over.

8. Bake uncovered for 18 to 20 minutes until cooked through.

9. Top with pineapple chunks and garnish with green onions before serving.

Notes

Do not overmix the meat to keep it tender.

You can substitute ground turkey for a lighter option.

Serve with toothpicks for easy appetizer presentation.
