Description
A fresh and vibrant pea salad made with creamy goat cheese, toasted pecans, and a bright lemon Dijon dressing. Perfect as a quick summer side dish.
Ingredients
2 tablespoons minced shallot
1 garlic clove, minced
1 tablespoon Dijon mustard
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1 tablespoon olive oil
1 tablespoon apple cider vinegar
2 teaspoons fresh lemon juice
1 tablespoon lemon zest
2 cups frozen green peas, thawed
4 ounces goat cheese, crumbled
1/3 cup pecans, toasted and finely chopped
1/4 cup smoked almonds or roasted sunflower seeds, chopped
Instructions
1. In a medium bowl, whisk together the shallot, garlic, Dijon mustard, salt, black pepper, olive oil, apple cider vinegar, and lemon juice until well combined. Let the dressing sit for about 10 minutes so the flavors can blend.
2. Add the thawed peas, goat cheese, pecans, and smoked almonds or sunflower seeds to the bowl. Gently toss everything together until the peas are evenly coated and the cheese is lightly mixed throughout.
3. Sprinkle the lemon zest over the top just before serving. Serve right away, or chill briefly for an even more refreshing salad.
Notes
For best flavor, use high-quality goat cheese and freshly toasted pecans. The salad can be chilled briefly before serving to enhance the refreshing citrus flavor.
