Description
Soft pretzel bites stuffed with creamy buffalo chicken and served with homemade blue cheese dressing.
Ingredients
For the Blue Cheese Dressing:
1/3 cup mayonnaise
1/3 cup sour cream
1/4 cup buttermilk
2 tablespoons whole milk
1 tablespoon white vinegar
1/4 teaspoon black pepper
4 ounces crumbled blue cheese
For the Stuffed Buffalo Chicken Pretzel Bites:
1 fully cooked boneless skinless chicken breast shredded
4 ounces cream cheese softened
2 celery stalks finely chopped
2 tablespoons cayenne pepper hot sauce
1/2 teaspoon garlic powder
1/4 teaspoon kosher salt
1/8 teaspoon black pepper
2 1/4 teaspoons active dry yeast
3/4 cup warm water
2 1/2 cups all-purpose flour
1/2 teaspoon kosher salt
1 tablespoon olive oil
3 quarts water
2/3 cup baking soda
1 large egg beaten
2 tablespoons coarse sea salt
Celery sticks for serving
Instructions
1. In a medium bowl whisk mayonnaise sour cream buttermilk milk vinegar and black pepper until smooth. Fold in blue cheese and refrigerate.

3. In a large bowl combine shredded chicken cream cheese celery hot sauce garlic powder salt and pepper. Mix well.

5. Stir yeast and warm water in a bowl and let sit 5 minutes until foamy.

7. Combine flour and salt in a mixing bowl. Add yeast mixture and mix until dough forms. Knead 5 minutes until smooth.

9. Place dough in an oiled bowl cover and let rise 1 to 2 hours until doubled.

11. Preheat oven to 425°F and line a baking sheet with parchment.

13. Roll dough into a 1 inch thick square and cut into 2 inch squares.

15. Place 1 tablespoon filling in each square brush edges with egg fold corners up seal and roll into balls.

17. Bring water to boil and slowly add baking soda.

19. Boil pretzel bites in batches for 1 minute then remove and place on baking sheet.

21. Brush with egg sprinkle with coarse salt.

23. Bake 15 minutes until golden brown.

25. Serve warm with blue cheese dressing and celery sticks.
Notes
Allow the blue cheese dressing to chill for the best flavor.
Seal the dough well so the filling stays inside during baking.
Serve warm for the best texture.
