Ingredients

1 lb raw shrimp, thawed and peeled

1 tablespoon neutral cooking oil

2/3 cup sweet chili sauce

1 1/2 tablespoons low-sodium soy sauce

1 teaspoon sriracha (optional)

1/3 cup chopped roasted salted cashews or peanuts

Fresh mint, cilantro, or basil for garnish

Sesame seeds (optional)

Iceberg or romaine lettuce leaves for serving


Instructions

1. In a small bowl, whisk together the sweet chili sauce, soy sauce, and optional sriracha. Set aside.

2. Warm the oil in a large skillet over medium heat. Add the shrimp and cook for about 2 minutes per side, or until pink and opaque.

3. Pour the prepared sauce over the shrimp and stir until fully coated and warmed through.

4. Spoon the shrimp into lettuce leaves and top with chopped nuts and herbs. Add extra sriracha if desired and serve immediately.
