Spinach Artichoke Dip – Creamy, Cheesy Party Favorite

Description

A warm, creamy appetizer made with spinach, artichokes, Greek yogurt, and melted cheeses. Perfect for parties, gatherings, or game day snacking.


Ingredients

13.75 ounces artichoke hearts packed in water, drained

10 ounces frozen spinach, thawed and squeezed dry

1/4 cup finely chopped shallots

1 garlic clove, minced

1/2 cup nonfat Greek yogurt

1/2 cup light mayonnaise or light sour cream

2/3 cup grated Parmesan cheese

4 ounces part-skim mozzarella cheese, shredded

Salt, to taste

Black pepper, to taste


Instructions

1. Preheat the oven to 375°F if using the oven method.

2. Place the drained artichoke hearts, minced garlic, and chopped shallots in a small food processor and pulse a few times until roughly chopped.

3. Transfer the mixture to a mixing bowl and add squeezed spinach, Greek yogurt, mayonnaise or sour cream, Parmesan cheese, and mozzarella.

4. Season with salt and black pepper and stir until evenly combined.

5. For the oven method spread the mixture into an oven safe dish and bake for 20 to 25 minutes until hot and melted.

6. For the microwave method place in a microwave safe dish and heat 3 to 5 minutes until warmed through.

7. Serve warm with chips, crackers, or sliced vegetables.

Notes

Be sure to squeeze excess moisture from the spinach to keep the dip thick and creamy. This dip can also be assembled ahead of time and baked just before serving.
