Description

A crunchy smoky snack mix made with roasted chickpeas, walnuts, pecans, and almonds coated in a bold chipotle spice blend. Perfect for parties, game day, or everyday snacking.


Ingredients

1 (15-ounce) can chickpeas, drained and rinsed

2 tablespoons olive oil

2 teaspoons kosher salt

1 teaspoon chipotle chile powder

1 teaspoon ground cumin

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 teaspoon poultry seasoning

1 teaspoon packed light brown sugar

1/2 teaspoon black pepper

1 pound raw mixed nuts (such as walnuts, pecans, and almonds), about 3 cups


Instructions

1. Preheat the oven to 375°F. Spread the chickpeas onto a clean kitchen towel and gently pat them dry. Rub them lightly to loosen the skins and discard as many of the loose skins as possible.

2. Place the dried chickpeas on a baking sheet. Drizzle with 1 tablespoon of olive oil and toss to coat evenly.

3. Roast the chickpeas for 30 to 35 minutes, shaking the pan halfway through, until they begin to dry and become lightly crisp.

4. Lower the oven temperature to 325°F.

5. In a large bowl, combine the salt, chipotle chile powder, cumin, garlic powder, smoked paprika, poultry seasoning, brown sugar, and black pepper. Mix well.

6. Add the roasted chickpeas and mixed nuts to the bowl. Drizzle with the remaining 1 tablespoon olive oil and toss everything together until evenly coated with the seasoning mixture.

7. Spread the seasoned nuts and chickpeas in a single layer on the baking sheet.

8. Bake for 15 to 20 minutes, stirring once halfway through, until the nuts are fragrant and the chickpeas are crunchy.

9. Allow the snack mix to cool slightly before serving.

Notes

Drying chickpeas thoroughly helps them become crisp during roasting.

Removing loose chickpea skins improves texture.

Store the cooled snack mix in an airtight container to maintain crunch.
