Description

A savory, elegant appetizer featuring roasted mixed mushrooms, creamy goat cheese, crisp crostini, and a touch of honey.


Ingredients

1 baguette, sliced on a slight angle into 1-inch pieces

Olive oil, for brushing

2 tablespoons olive oil

2 pounds mixed mushrooms (cremini, oyster, shiitake), sliced

2 teaspoons chopped fresh thyme, plus extra for garnish

Salt and pepper, to taste

8 ounces goat cheese, softened

Wildflower honey, for drizzling


Instructions

1. Preheat the oven to 350°F.

2. Lightly brush both sides of the baguette slices with olive oil. Arrange them on a baking sheet in a single layer and bake for 15–20 minutes, or until crisp and lightly golden.

3. Place the sliced mushrooms on a separate baking sheet. Drizzle with 2 tablespoons olive oil, sprinkle with thyme, salt, and pepper, and toss to coat. Spread the mushrooms evenly on the pan.

4. Roast the mushrooms for about 25 minutes, or until deeply browned and caramelized. Allow them to cool slightly.

5. To assemble, spread about 1 tablespoon of softened goat cheese on each toasted baguette slice. Spoon roasted mushrooms over the top.

6. Finish with a light drizzle of honey and a sprinkle of fresh thyme before serving.

Notes

Use a mix of mushrooms for the best flavor. Toast the bread ahead to streamline prep.
