Description
Roasted grape and ricotta crostini is a sweet and savory appetizer made with balsamic roasted grapes, creamy ricotta, and crisp toasted baguette slices finished with lemon zest and flaky salt.
Ingredients
3 cups seedless red grapes
1 tablespoon balsamic vinegar
6 sprigs fresh thyme
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
3 tablespoons olive oil, divided
1 baguette, sliced 1/2 inch thick (about 24 slices)
1 1/2 cups ricotta cheese
Zest of 1 lemon
Flaky salt, for topping
Instructions
1. Preheat the oven to 400°F. Place the grapes in a 9-by-13-inch baking dish. Add the balsamic vinegar, thyme sprigs, kosher salt, black pepper, and 1 tablespoon olive oil. Toss gently to coat the grapes.
2. Roast the grapes for about 25 minutes until they soften, wrinkle slightly, and release their juices. Remove the thyme sprigs and set aside.
3. Turn on the broiler. Arrange the baguette slices on a baking sheet and brush both sides with the remaining olive oil.
4. Broil for 1 to 2 minutes per side until the bread becomes golden and crisp.
5. Spread about 1 tablespoon of ricotta cheese on each toasted slice.
6. Spoon roasted grapes over the ricotta and finish with lemon zest and flaky salt.
7. Serve immediately while the crostini remain crisp.
Notes
Use high-quality whole milk ricotta for the creamiest texture.
Roasted grapes can be prepared a day ahead and gently reheated before serving.
Toast the bread just before assembling to maintain crispness.
