Ingredients

  • 1 large head garlic, cloves separated with skins on

  • 1 teaspoon olive oil

  • Pinch of salt

  • 2 tablespoons roasted garlic paste (from above)

  • 8 tablespoons (1 stick) unsalted butter, softened

  • 1 teaspoon anchovy paste or finely minced anchovies

  • 1/4 cup finely grated parmesan

  • 1/4 teaspoon kosher salt

  • 1 tablespoon finely minced parsley (optional)


Instructions

  • Roast the garlic:
    Preheat the oven to 350°F. Place the unpeeled garlic cloves on a sheet of foil, drizzle with olive oil, and sprinkle with a pinch of salt. Wrap tightly and bake for about 30 minutes, or until the cloves are soft and easily squeezed into a paste.

  • Prepare the butter mixture:
    Scoop 2 tablespoons of the roasted garlic into a bowl. Add the softened butter, anchovy paste, parmesan, and salt. Blend with a stick blender or mash thoroughly until smooth. Stir in parsley if you’d like a fresh herbal finish.

  • Serve or store:
    Spread on warm bread, melt over grilled chicken or fish, or toss with cooked vegetables. For firmer slices, shape the mixture into a log, wrap tightly, and refrigerate until solid.
