Description

A vibrant Italian appetizer made with roasted cherry tomatoes, warm garlic, olive oil, and fresh basil served over crisp crostini.


Ingredients

1 pint cherry tomatoes

45 garlic cloves, peeled

1/2 cup olive oil

Salt and black pepper, to taste

Crostini

Fresh basil, chopped


Instructions

1. Preheat the oven to 450°F.

2. Place the tomatoes, garlic, olive oil, salt, and pepper in a baking dish and toss to coat.

3. Roast for 15–20 minutes, or until the tomatoes are soft and lightly charred.

4. Remove from the oven and gently press the tomatoes with the back of a spoon to release their juices.

5. Spoon the warm tomato mixture over crostini, including the juices.

6. Finish with a generous sprinkle of chopped basil and serve immediately.

Notes

For deeper flavor, add a drizzle of balsamic glaze. Serve the topping warm for the best texture.
