Ingredients
2 to 3 tablespoons extra-virgin olive oil
2/3 cup panko breadcrumbs
1 teaspoon smoked paprika
Kosher salt, to taste
Freshly ground black pepper, to taste
1/3 cup mayonnaise
1/3 cup sour cream
2 tablespoons thinly sliced fresh chives, plus more for garnish
2 teaspoons Dijon mustard
4 boneless, skinless chicken breasts (6 to 8 ounces each)
1 cup shredded cheddar cheese
Instructions
1. Preheat the oven to 400°F. Lightly grease a 13 x 9-inch baking dish with olive oil and set aside.
2. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the panko breadcrumbs and cook, stirring often, until lightly golden and crisp, about 2 to 3 minutes. Season with salt and pepper. Transfer to a plate and allow to cool.
3. In a shallow bowl, whisk together the mayonnaise, sour cream, chives, and Dijon mustard. Season with salt and pepper to taste.
4. Pat the chicken breasts dry with paper towels. Sprinkle evenly with smoked paprika, salt, and pepper. Dip each piece into the creamy mixture, coating both sides thoroughly, then place in the prepared baking dish. Spoon any remaining sauce evenly over the top of the chicken.
5. Stir the shredded cheddar cheese into the cooled panko breadcrumbs. Season lightly with pepper. Evenly sprinkle the breadcrumb mixture over each chicken breast, gently pressing it down so it adheres.
6. Bake for 25 to 30 minutes, or until the topping is golden brown and the internal temperature of the chicken reaches 165°F.
7. Remove from the oven and let rest for 10 minutes before serving. Garnish with additional fresh chives.
Notes
Use gluten-free breadcrumbs if you want a gluten-free version.
Allow the chicken to rest after baking to keep it juicy.
