Description
One-pot spicy chicken rice made with juicy chicken thighs, fragrant basmati rice, and bold pantry spices. A complete stovetop dinner with minimal cleanup.
Ingredients
6 boneless, skin-on chicken thighs
1 ½ teaspoons dried oregano
¾ teaspoon paprika
¾ teaspoon chili powder
2 tablespoons soy sauce
2 ½ tablespoons oyster sauce
1 ½ teaspoons garlic powder
3 tablespoons olive oil
Salt and black pepper, to taste
1 large onion, finely chopped
2 large tomatoes, chopped
1 tablespoon minced garlic
1 tablespoon soy sauce
2 tablespoons ketchup
3 tablespoons tomato sauce
1 ½ cups uncooked white basmati rice
2 ½ cups chicken stock or water
Instructions
1. Combine chicken with marinade ingredients and rest 10 minutes.
2. Sear chicken skin-side down until golden, then set aside.
3. Sauté onion, tomatoes, and garlic until softened.
4. Stir in rice until coated.
5. Mix in tomato sauce, soy sauce, and ketchup.
6. Add stock and return chicken to pan.
7. Cover and simmer until rice is tender.
8. Rest covered before serving.
Notes
Let the dish rest before serving to improve texture. Adjust chili powder to control heat.
