This One Pot Queso Chicken and Rice is a creamy, cheesy skillet dinner made with tender chicken, long-grain rice, salsa, spices, and melty cheddar—all simmered in one pot for maximum flavor and minimal cleanup. It’s quick, comforting, and perfect for busy nights or when you need a fuss-free dinner that satisfies.


Ingredients

1 ½ pounds boneless, skinless chicken breast, cut into bite-size cubes

2 tablespoons olive oil

2 tablespoons butter

½ teaspoon salt

½ teaspoon black pepper

1 small yellow onion, finely diced

2 cups long-grain white rice

1 tablespoon minced garlic

4 cups chicken broth

1 cup salsa

1 teaspoon ground cumin

1 teaspoon chili powder

1 cup heavy cream

3 cups shredded cheddar cheese, divided


Instructions

1. Heat the olive oil and butter in a large, heavy pot over medium heat.

2. Add the chicken pieces, season with salt and black pepper, and cook for about 5 minutes, stirring occasionally, until lightly golden on the outside.

3. Stir in the diced onion and cook for another 3 to 5 minutes, until softened and translucent. Transfer the chicken and onion mixture to a bowl and set aside.

4. In the same pot, add the rice and minced garlic. Cook for 2 to 3 minutes, stirring constantly, until the rice smells lightly toasted.

5. Slowly pour in the chicken broth and salsa. Stir in the cumin and chili powder until everything is well mixed.

6. Bring the mixture to a gentle boil, then reduce the heat to medium-low. Cover and cook for 15 to 20 minutes, or until the rice is tender and most of the liquid is absorbed.

7. Remove the pot from the heat. Stir in the heavy cream and 2 cups of the shredded cheddar cheese until creamy and smooth.

8. Add the cooked chicken and onions back into the pot and mix well.

9. Sprinkle the remaining cheese over the top, cover, and let sit for 2 to 3 minutes until the cheese melts. Serve warm.

Notes

For extra veggies, stir in diced bell peppers, corn, or black beans with the rice. To increase the spice level, use hot salsa or add chopped jalapeños. Leftovers reheat beautifully with a splash of broth or cream.
