Description
A bright Mediterranean one-pot meal with lemony chicken, tender orzo, sweet vegetables, cherry tomatoes, and feta.
Ingredients
1 lb chicken thighs or breasts, cut in 1-inch pieces
2 garlic cloves, minced
1 tbsp dried oregano
1 tbsp olive oil
1/2 tbsp lemon juice
1 tsp lemon zest
1/2 tsp salt
1/2 tsp black pepper
2 tbsp olive oil

1 small onion, chopped
2 medium zucchini, diced
1 red bell pepper, diced
1 tbsp dried oregano
2 1/2 cups chicken broth
14 oz crushed tomatoes
1 tbsp tomato paste
1 1/2 cups orzo
1 1/2 cups cherry tomatoes
1 tsp kosher salt
1/2 tsp pepper
2 tbsp lemon juice
1/2 cup crumbled feta
Fresh oregano leaves
Instructions
1. Marinate chicken with garlic, oregano, olive oil, lemon juice, zest, salt, and pepper.
2. Preheat oven to 350°F.
3. Brown the chicken in an oven-safe skillet.
4. Sauté garlic, onion, zucchini, and bell pepper.
5. Add orzo, oregano, broth, crushed tomatoes, tomato paste, salt, and pepper.
6. Top with chicken and cherry tomatoes.
7. Bring to a simmer, then bake 15 minutes.
8. Finish with lemon juice, feta, and oregano.
Notes
Let the dish rest for 5 minutes after baking for perfect texture. Add extra broth if you prefer a looser consistency.
