Ingredients
-
½ cup olive oil
-
1 tbsp dried oregano
-
1 tbsp minced garlic
-
Zest of 1 lemon
-
¼ cup fresh lemon juice
-
1 tbsp sweet paprika
-
1 tsp dijon mustard
-
1 tsp sugar
-
1½ tsp sea salt
-
½ tsp black pepper
-
2½ lb boneless, skinless chicken thighs
-
6 medium all-purpose potatoes, cut into wedges
-
½ cup chicken broth
-
Fresh oregano or parsley, for garnish
Instructions
-
Preheat the oven to 400°F, ensuring it reaches full temperature before baking.
-
In a large bowl, whisk together the olive oil, dried oregano, garlic, lemon zest, lemon juice, paprika, dijon mustard, sugar, salt, and pepper.
-
Add the chicken to the bowl and coat thoroughly. You can marinate it for up to 24 hours or proceed immediately.
-
Spread the potato wedges in a large baking pan. Place the chicken on top, then pour any remaining marinade over the potatoes.
-
Arrange everything in a single, even layer so the chicken cooks evenly.
-
Pour the chicken broth into the bottom of the pan.
-
Bake for 55–60 minutes, moving the potatoes around halfway through to promote even browning.
-
Garnish with fresh oregano or parsley and serve warm.
