  • 1 tsp sugar

  • 1½ tsp sea salt

  • ½ tsp black pepper

  • 2½ lb boneless, skinless chicken thighs

  • 6 medium all-purpose potatoes, cut into wedges

  • ½ cup chicken broth

  • Fresh oregano or parsley, for garnish


Instructions

  • Preheat the oven to 400°F, ensuring it reaches full temperature before baking.

  • In a large bowl, whisk together the olive oil, dried oregano, garlic, lemon zest, lemon juice, paprika, dijon mustard, sugar, salt, and pepper.

  • Add the chicken to the bowl and coat thoroughly. You can marinate it for up to 24 hours or proceed immediately.
