Description
Mozzarella Stuffed Chicken Meatballs baked until golden with a gooey mozzarella center, fresh herbs, and savory aromatics.
Ingredients
1 lb ground chicken
1 small onion, halved
2 garlic cloves
1 teaspoon salt
1/2 cup grated Parmesan cheese
1 egg
1/2 teaspoon allspice
1/half teaspoon black pepper
1/3 cup fresh basil
1 cup panko breadcrumbs
3.5 oz firm mozzarella, cut into small cubes
1 tablespoon olive oil
Olive oil cooking spray
Instructions
1. Preheat the oven to 400°F and lightly coat a baking sheet with cooking spray.
2. In a food processor, blend the onion, garlic, and basil until finely minced.
3. Transfer the mixture to a large bowl and add the egg, salt, spices, breadcrumbs, cheese, and ground chicken. Mix until evenly combined.
4. Lightly oil your hands to prevent sticking. Scoop about 1 tablespoon of the chicken mixture, place a cube of mozzarella in the center, and shape it into a ball, ensuring the cheese is fully enclosed.
5. Arrange the meatballs on the prepared baking sheet and brush or drizzle them with olive oil.
6. Bake for 18–20 minutes on the center rack, or until cooked through.
7. Serve warm.
Notes
For best results, use firm mozzarella to prevent leaking. Chill the formed meatballs for 10 minutes before baking for cleaner edges.
