Ingredients

1 tablespoon olive oil

1 medium onion, chopped

1 pound ground beef

1 teaspoon chili powder

1 teaspoon ground coriander

1/2 teaspoon dried oregano

3/4 teaspoon kosher salt, plus more to taste

1 (16-ounce) bag sturdy tortilla chips

1 bell pepper, chopped

1 (15-ounce) can black beans, rinsed and drained

1 cup frozen corn

1 (2.25-ounce) can sliced black olives

1 to 1 1/2 cups shredded cheddar cheese or Mexican-style cheese blend

1 avocado, diced

2 scallions, thinly sliced

1 plum tomato, diced

1/2 cup chopped cilantro

1 jalapeño, seeded and thinly sliced

1/3 cup sour cream

1 cup sour cream

Juice of 1 lime

1/3 cup cilantro

Pinch of salt


Instructions

1. Preheat the oven to 400°F and line a sheet pan with parchment paper if desired.

2. Heat olive oil in a skillet over medium heat and cook the chopped onion for about 5 minutes until softened.

3. Add ground beef, chili powder, coriander, oregano, and salt. Cook for 8 to 10 minutes while breaking up the meat until browned.

4. Spread tortilla chips across the sheet pan in an even layer.

5. Use a slotted spoon to transfer the beef mixture onto the chips, leaving excess grease behind.

6. Scatter bell pepper, black beans, corn, black olives, and shredded cheese over the chips.

7. Bake for 5 to 7 minutes until the cheese is melted and bubbly.

8. Blend sour cream, lime juice, cilantro, and salt to make the cilantro lime crema.

9. Remove nachos from the oven and add avocado, scallions, tomato, cilantro, jalapeño, and sour cream if desired.

10. Drizzle the crema over the nachos and serve immediately.

Notes
