Description
Loaded Mediterranean-style sweet potato fries topped with creamy tzatziki, chickpeas, fresh tomatoes, herbs, feta cheese, and crispy pita strips. A vibrant vegetarian dinner inspired by Mediterranean street food.
Ingredients
1 cup plain whole-milk yogurt
1/2 medium zucchini, grated and lightly squeezed dry
1/2 cup chopped fresh parsley
1 garlic clove, minced
1 tablespoon chopped fresh dill
1 tablespoon lemon juice, or to taste
1/4 teaspoon salt, or to taste
1 (15-ounce) can chickpeas, rinsed and drained
4 medium tomatoes, diced
2 tablespoons olive oil
1 garlic clove, minced
2 tablespoons chopped fresh parsley
1 tablespoon lemon juice, or to taste
1/4 teaspoon salt, or to taste
1 (20-ounce) bag frozen sweet potato fries
1 head romaine lettuce, chopped
2 pita breads, cut into strips
1/4 cup neutral oil, for shallow frying
1/2 cup crumbled feta cheese
Extra parsley, dill, or lemon wedges for serving (optional)
Instructions
1. Make the tzatziki by stirring together the yogurt, grated zucchini, parsley, garlic, dill, lemon juice, and salt in a medium bowl. Mix until smooth and refrigerate until ready to use.
2. In another bowl combine chickpeas, diced tomatoes, olive oil, garlic, parsley, lemon juice, and salt. Toss well and let the mixture marinate while preparing the other components.
3. Bake the sweet potato fries according to package directions until hot and crisp.
4. Chop the romaine lettuce into bite-size pieces and set aside.
5. Heat the neutral oil in a skillet over medium heat. Fry the pita strips in batches for 1–2 minutes per side until golden and crisp. Transfer to a paper towel-lined plate and lightly salt.
6. Divide the baked fries among serving bowls. Spoon tzatziki over the fries.
7. Top with the tomato and chickpea mixture, chopped romaine, fried pita strips, and crumbled feta cheese.
8. Finish with extra herbs or a squeeze of lemon juice if desired and serve immediately.
Notes
For extra crisp fries, bake them in a single layer without overcrowding the pan.
The tzatziki and chickpea mixture can be made several hours ahead and refrigerated.
Regular potato fries can be used instead of sweet potato fries if preferred.
