Ingredients

4 large baking potatoes, scrubbed clean

2 tablespoons vegetable oil

1 teaspoon salt

4 tablespoons butter, divided

Freshly ground black pepper

2 boneless, skinless chicken breasts, cooked and sliced

4 strips turkey bacon, cooked until crisp and crumbled

2 green onions, thinly sliced

For the Creamy Alfredo Sauce:

2 tablespoons butter

1 clove garlic, finely minced

2 tablespoons all-purpose flour

1 cup whole milk

1 cup freshly shredded Monterey Jack cheese

Salt and black pepper, to taste


Instructions

1. Preheat the oven to 350°F. Pat the potatoes dry, rub with oil, sprinkle with salt, pierce, and bake directly on the rack for 50–60 minutes until tender.

2. Melt butter in a saucepan over medium heat. Add garlic and cook until fragrant.

3. Whisk in flour and cook briefly. Slowly add milk, whisking until smooth.

4. Simmer until slightly thickened, then stir in cheese, salt, and pepper.

5. Slice open potatoes, add butter, season, top with chicken, sauce, bacon, and green onions.

Notes

Bake potatoes until fully tender for best texture. Reheat leftovers gently to maintain sauce consistency.
