Description
Crispy oven-baked lemon garlic chicken wingettes bursting with fresh citrus flavor and savory garlic.
Ingredients
½ cup olive oil
½ cup fresh lemon juice
Zest of 1 lemon
2 tablespoons finely diced garlic cloves
1 tablespoon plus 1½ teaspoons kosher salt
1 tablespoon plus 1½ teaspoons freshly ground black pepper
4 pounds chicken wings, thawed if frozen
Lemon wedges, for garnish
2 tablespoons finely sliced scallion greens, for garnish
Instructions
1. In a large mixing bowl, whisk together the olive oil, lemon juice, lemon zest, garlic, salt, and black pepper until fully combined.
2. Add the chicken wings to the bowl and toss well to coat them evenly in the marinade. Let them sit while the oven preheats.
3. Preheat the oven to 425°F. Line two large rimmed baking sheets with foil and place wire racks on top.
4. Using tongs, lift the wings from the marinade and arrange them skin-side up on the racks, leaving space between each piece.
5. Bake for 35 minutes, or until the wings reach an internal temperature of 165°F and the skin is crisp and golden.
6. Remove from the oven and serve immediately with lemon wedges and sliced scallion greens.
Notes
Do not overcrowd the baking sheets to ensure crispy skin.
Allow excess marinade to drip off before baking for best texture.
Serve immediately for optimal crispness.
