Juicy, bright, and richly seasoned, these Lemon Garlic Chicken Skewers combine citrus, herbs, and garlic butter for a fast, high-flavor dinner.
Ingredients
3 lbs boneless skinless chicken thighs, cut into 2-inch pieces
1/4 cup olive oil
Juice of 1/2 lemon
3 tablespoons plain Greek yogurt
2 teaspoons paprika
1 teaspoon garlic powder
2 teaspoons salt
1 teaspoon black pepper
Garlic Herb Butter:
1/2 cup unsalted butter
12 cloves garlic, minced
1/2 cup grated Parmesan cheese
1/4 cup chopped parsley
Juice of 1/2 lemon
2 teaspoons salt
1 teaspoon black pepper
Instructions
1. Mix chicken with olive oil, lemon juice, yogurt, paprika, garlic powder, salt, and pepper. Marinate 30 minutes or overnight.
2. Melt butter in a saucepan. Add garlic and cook 2 minutes. Stir in Parmesan, parsley, lemon, salt, and pepper.
3. Thread marinated chicken onto skewers.
4. Grill 4–5 minutes per side until cooked through. Or bake at 425°F for 20–25 minutes, flipping halfway.
5. Brush hot skewers generously with garlic herb butter.
6. Serve with lemon wedges or salad.
Notes
Use thigh meat for best tenderness. Add chili flakes for heat. Air fryer option: 390°F for 12–14 minutes, turning once.
