Lemon Chicken Stir Fry That’s Fast, Fresh, and Full of Flavor

Description

A zesty lemon chicken stir fry made with tender chicken breast, fresh green beans, and a bright homemade lemon sauce. Quick, healthy, and packed with flavor.


Ingredients

For the Lemon Sauce:

¼ cup low-sodium soy sauce

¼ cup honey

1 teaspoon fresh lemon zest

3 tablespoons fresh lemon juice

1 teaspoon sesame oil

1 tablespoon freshly grated ginger

4 garlic cloves, minced

1 teaspoon chili garlic sauce

For the Stir-Fry:

pounds boneless, skinless chicken breast, cut into 1-inch pieces

⅓ cup cornstarch

1 teaspoon salt

¼ teaspoon black pepper

10 ounces fresh green beans, trimmed and halved

12 tablespoons vegetable oil

1 teaspoon sesame seeds (optional, for garnish)


Instructions

1. In a small bowl, whisk together all the lemon sauce ingredients until smooth. Set aside.

2. In a large bowl, toss the chicken pieces with cornstarch, salt, and pepper until evenly coated.

3. Heat a large skillet or sauté pan over medium-high heat and add 1 tablespoon of oil. Add the green beans and cook, stirring frequently, until lightly blistered and tender-crisp, about 3–4 minutes. Transfer to a plate.

4. Add the remaining oil to the pan. Cook the chicken in a single layer, working in batches if needed, for 3–4 minutes per side until golden and cooked through.

5. Return the green beans to the pan with the chicken. Pour in the lemon sauce and stir well, scraping up any browned bits from the bottom of the pan.

6. Cook for 2–3 minutes, stirring, until the sauce thickens and coats everything evenly.

7. Sprinkle with sesame seeds if desired and serve hot, on its own or over rice.

Notes

You can substitute green beans with snap peas, broccoli, or bell peppers. Omit chili garlic sauce for a milder version. Leftovers store well in the fridge for up to 4 days.
