Description
A hearty vegan stew made with leeks, potatoes, tomato sauce, and olives. Comforting, simple, and perfect for everyday meals.
Ingredients
2 tablespoons olive oil
3 medium leeks, white and light green parts only, sliced
1 large carrot, peeled and diced
3 medium potatoes, peeled and cubed
1/2 cup tomato sauce
1 cup vegetable stock
1 cup pitted black olives
1/2 cup fresh parsley, chopped
Salt, to taste
Ground black pepper, to taste
Instructions
1. Heat olive oil in a large pot over medium heat. Add leeks and carrot, cover, and cook for 5 minutes until softened.
2. Add potatoes, tomato sauce, and vegetable stock. Stir and bring to a gentle boil.
3. Reduce heat and simmer uncovered for 20 minutes until potatoes are tender.
4. Stir in olives and parsley. Season with salt and black pepper.
5. Serve warm with optional extra parsley.
Notes
Clean leeks thoroughly to remove grit. Adjust seasoning at the end for best flavor.
