Description

Crispy, cheesy, pan-fried fritters made with ground chicken, jalapeños, and sharp cheddar for a flavorful weeknight dinner or appetizer.


Ingredients

1 pound ground chicken

1/4 cup finely chopped fresh jalapeños

2 tablespoons finely chopped green onions

1 teaspoon minced garlic

1/2 teaspoon garlic powder

1/2 teaspoon paprika

1/2 teaspoon seasoned salt

1 large egg

1 cup shredded sharp cheddar cheese

1 tablespoon coconut flour

Oil for pan-frying


Instructions

1. In a large bowl, mix together the ground chicken, jalapeños, green onions, minced garlic, garlic powder, paprika, and seasoned salt until evenly combined.

2. Add the egg, cheddar cheese, and coconut flour. Stir until the mixture forms a cohesive batter.

3. Scoop about 1/4 cup of the mixture per fritter and gently flatten each portion. They should be slightly thin, as they will puff while cooking.

4. Warm a thin layer of oil in a large skillet over medium heat. When the oil shimmers, place the fritters in the pan without crowding.

5. Cook for 3–4 minutes per side, or until golden brown and the centers reach 165°F.

6. Transfer the fritters to a paper-towel-lined plate to drain excess oil.

7. Serve hot with your preferred dipping sauce.

Notes

These fritters freeze well and reheat quickly. Adjust spice levels by removing jalapeño seeds.
