Ingredients
1 pound cheese-filled ravioli
3 tablespoons olive oil
1 cup finely chopped white onion
1 cup finely chopped carrot
1 cup finely chopped celery
1 tablespoon minced garlic
6 cups low-sodium chicken broth
3 cups cooked, shredded chicken
2 small packets Italian-style seasoning mix
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/2 cup shredded Parmesan-style cheese
1/4 cup chopped fresh parsley or 1 tablespoon dried parsley
Instructions
1. Cook ravioli in salted water until just tender, about one minute less than package directions. Drain and set aside.
2. Heat olive oil in a large pot over medium heat. Add onion, carrot, celery, and garlic. Cook until soft and fragrant.
3. Pour in chicken broth and stir well.
4. Add shredded chicken, cooked ravioli, seasoning mix, salt, pepper, and cheese. Stir gently.
5. Reduce heat and simmer until heated through.
6. Stir in parsley just before serving and adjust seasoning.
Notes
Cook ravioli separately to prevent overcooking. Add extra broth when reheating if needed.
