Description
Sweet, caramelized carrots tossed with honey, garlic, dill, and creamy feta for a balanced and vibrant side dish.
Ingredients
1 lb carrots, peeled and trimmed
1 tbsp honey (plus extra for serving)
1 tbsp olive oil
2 garlic cloves, minced
½ tsp dried dill (or 1 tbsp chopped fresh dill)
¼ tsp salt
Cracked black pepper, to taste
¼ cup crumbled feta cheese
Fresh dill, chopped, for garnish
Instructions
1. Preheat the oven to 425°F and line a large baking sheet with parchment paper.
2. Cut the carrots diagonally into 1½-inch pieces; slice thick ones in half lengthwise.
3. Combine carrots with honey, olive oil, garlic, dill, salt, and pepper; toss to coat.
4. Transfer carrots to baking sheet with a slotted spoon; reserve remaining liquid.
5. Roast 20–25 minutes. During last 5–10 minutes, brush reserved liquid over carrots.
6. Transfer to a serving dish and gently toss with crumbled feta.
7. Garnish with fresh dill and a drizzle of honey.
Notes
For extra heat, add a teaspoon of harissa to the honey mixture. Use fresh dill for best flavor.
