Ingredients
3 pounds boneless, skinless chicken thighs
3 tablespoons spicy-sweet seasoning blend
2/3 cup hot honey barbecue-style sauce, divided
Tortilla chips
2 cups shredded medium cheddar cheese
Pico de gallo (optional)
Sour cream (optional)
Sliced olives (optional)
Sliced green onions (optional)
Instructions
1. Preheat the smoker or oven to 275°F.
2. Pat the chicken thighs dry and season both sides with the spicy-sweet seasoning blend.
3. Place chicken on the smoker or baking sheet and cook 45–60 minutes, until the internal temperature reaches 175°F.
4. Let the chicken rest 5–10 minutes, then shred.
5. Spread tortilla chips on a baking sheet and top with cheddar and shredded chicken. Drizzle with half the hot honey sauce.
6. Return the tray to the smoker or oven for 5–10 minutes until the cheese melts.
7. Finish with remaining sauce and optional toppings, then serve warm.
