Description

A rich and creamy Tex-Mex dip made with seasoned ground beef, black beans, salsa, and homemade cheese sauce. Perfect for parties, game days, and gatherings.


Ingredients

1 pound ground beef

1 tablespoon taco seasoning

1/4 teaspoon cayenne pepper

1 (14-ounce) can black beans, rinsed and drained

1 1/2 cups salsa

1/2 cup water (optional, if needed)

2 tablespoons butter

3 tablespoons all-purpose flour

1 3/4 cups milk

1 cup shredded cheese

2 tablespoons chopped fresh cilantro or sliced green onions (optional)


Instructions

1. Place a large skillet over medium heat. Add the ground beef and cook until browned, breaking it into small crumbles as it cooks. Drain any excess fat.

2. Stir the taco seasoning and cayenne pepper into the beef. Add the black beans and salsa, mixing well. If the mixture seems too thick, add a small amount of water. Simmer for several minutes until it resembles a thick chili.

3. In a small saucepan, melt the butter over medium heat. Add the flour and stir constantly for about 1 minute to form a smooth paste.

4. Gradually pour the milk into the saucepan, whisking continuously after each addition. Continue cooking and whisking until the sauce thickens enough to coat the back of a spoon.

5. Stir the shredded cheese into the sauce and mix until fully melted and smooth.

6. Pour the cheese sauce into the skillet with the chili mixture. Stir well until everything is evenly combined.

7. Mix in the cilantro or green onions if desired.

8. Serve the dip warm in a serving bowl, or keep it warm in a small slow cooker for gatherings. The dip can also be made ahead and reheated gently before serving.

Notes

This dip can be kept warm in a slow cooker during parties.

Cheddar, Monterey Jack, or a Mexican cheese blend work well.

Add jalapeños for extra heat if desired.
